Sunday is for pancakes!! When I have the time... I like to make a big batch of mini pancakes to freeze for weekday breakfasts. So today I made that happen! Ps: these are vegan and gluten free option.
1c of all purpose flour (or brown rice flower for gluten free option) 3T arrowroot flour 2tsp baking powder 2tsp organic sugar 1c unsweetened almond or other non dairy milk 1/2c coconut milk from can (or use one whole can and 1/2c dairy alternative) 1 large ripe banana - mashed really well Mix all dry ingredients well. Add almond and coconut milks. Add mashed banana. Mix well with a fork. Heat large pan and pour mini sized pancakes. Flip when completely bubbled on top! Note: the gluten free version is not as fluffy as the white flour version. However both are tasty!! And the banana makes them kind of gooey inside. But it’s a good gooey!!! Yum!! I'm a Philly girl and our team is going to the SUPER BOWL!! WooHoo!
In honor of the Birds and how they should take my advice and drink their greens for super stamina and a clear head... Here's today's green smoothie! Makes 1 serving: 1c almond or other non dairy milk 2 handfuls (or 2-3 cups) baby kale or other green 1 banana 1T almond butter or other nut butter Blend all in a Vitamix or other high speed blender! Todays smoothie!!! And it’s “dadurday”. Our boys call Saturday, dadurday 😂. Now... if only they would drink these damn smoothies again!! As they get older, they get more picky 😩.
I buy lots of fruits and vegetables so when I get through almost a week without using them, I need to use them up before going bad! So what better... throw them in a smoothie 👌🏻. Makes 2 servings: 2c coconut water 1/2 peeled cucumber 1 clementine 2 stalks celery with leaves. 1c pineapple 1 banana 2 large handfuls of spinach, kale, romaine or any other green... even mixed green salad! Blend all in a Vitamix until smooth. Today’s smoothie was sooo creamy and yummy!
I added something a bit different. So Delicious Coconut Yogurt (non dairy) and vanilla flavored! I do not add dairy (from animals) to smoothies, ever. It slows digestion and causes inflammation. So using alternatives is a must! Recipe for 2 servings: 1 to 1.5 (I used another half bc it was open from my kid who didn’t finish it!!) containers of coconut yogurt - vanilla flavor 1/2 cup non dairy milk alternative. 1-2 handfuls spinach 1-2 handfuls of baby kale 1/3 cup of uncooked whole rolled oats (to give this smoothie more substance and hold you over till next meal!) 1 cup chopped pineapple 1 frozen banana small nub (thumb size) fresh ginger. Blend all in a Vitamix or Other high speed blender!! |
