#todayssmoothie... BOWL!

This came as an inspiration from the Playa Bowls chain... My friends rave about them, but I've never had one... and they look so delicious and pretty with all of the colors!!  Introducing my green smoothie bowl:

Part I - In Blender:
1/2c Vanilla flavored coconut/almond milk
1/2c Water
1c or handful of dandelion greens
1c or handful of kale
1 banana
Blend all in a Vitamix

Part II - Pour mix into a bowl and add 3-4TBSP of chia seeds, stir well... Add bowl to fridge at least 15 minutes to let the chia seeds expand (can be overnight as well!)... The mix should be pudding like when you take it out.

Part III - take out your bowl and add fresh berries (i.e.:  strawberries, blackberries, blueberries, etc..) and nuts of your choice!  I used salted pistachios.  

**For added fiber (I use this to help with regularity!!)... mix in 3 TBSP of ground flax seed

I made this smoothie a few weeks ago, but didn't get a chance to post!  Ya know... life gets in the way :)

Since I have an abundance of kale and swiss chard in our garden, I've been using most that in my smoothies lately.  However, I'm careful not to have too much every day!  Even kale and chard every single day may not be a good thing.  It's super important to have variation in your diet!  

Anywhoo... here goes!

1/2c water
1/2c orange juice
1/4 lemon
2 celery stalks *with leaves!
2-3 large kale leaves
1-2 large swiss chard leaves
1/2 banana
1/2c frozen pineapple

It's been SO LONG since I posted my smoothies!  I'm sorry :)  But, here I am, feeling fancy and vibrant and just all out in a good ass mood!  

I've been doing a lot of soul loving practices lately... like yoga, meditation, reading books and listening to audiobooks and podcasts.  I can't get enough!  Click here for what I'm reading and listening to for some good uplifting resources.  Enjoy!

Now... Today's smoothie! Sweet and simple it is!

1c water
1 banana
1c organic green grapes
1 handful of organic spinach
2 large organic kale leaves

Blended all in a Vitamix!

Look how beautiful this is!!!

This would be really yummy if I had pineapple, but for this one I didn't have any!  I'll remember to add it for next time!

1/2c + 1/2c water** of coconut milk from the can mixed with water (**I added water b/c I only had the fat left!), but certainly use the water/fat in the can if that's what you have!
1c frozen wild blueberries
1tsp matcha green tea powder
1c spinach
1 banana

Blend all in a Vitamix or other high speed blender like the Ninja.

This smoothie is not your typical GREEN smoothie, but it sure does have greens in it!  It looks more like chocolate milk! 

I'm LOVING Cascadian Farms Toasted ALmond Coconut Milk...Plus it's carageenan free!

1c Toasted Almond Coconut Milk
1/3c tofu (I used actual cubes, but you can certainly use silken tofu)
1-2c spinach and kale (or other green)
1c frozen sweet cherries
1 slice (1/4 lemon)
1 banana

Blend all in a vitamix or other high speed blender like the Ninja.

makes 1 large or 2 small to medium servings.

1.5-2c almond coconut milk
1c spinach
1c kale
1T matcha powder
1c frozen pineapple
1 large or 2 smaller bananas
1tsp vanilla extract (optional)

blend all in a Vitamix.

Sunday is for pancakes!! When I have the time... I like to make a big batch of mini pancakes to freeze for weekday breakfasts. So today I made that happen! Ps: these are vegan and gluten free option.

1c of all purpose flour (or brown rice flower for gluten free option)
3T arrowroot flour
2tsp baking powder
​2tsp organic sugar

1c unsweetened almond or other non dairy milk
1/2c coconut milk from can (or use one whole can and 1/2c dairy alternative)
1 large ripe banana - mashed really well

Mix all dry ingredients well.
Add almond and coconut milks.
Add mashed banana.

Mix well with a fork.

Heat large pan and pour mini sized pancakes. Flip when completely bubbled on top!

Note: the gluten free version is not as fluffy as the white flour version. However both are tasty!! And the banana makes them kind of gooey inside. But it’s a good gooey!!!

I'm a Philly girl and our team is going to the SUPER BOWL!!  WooHoo!  

In honor of the Birds and how they should take my advice and drink their greens for super stamina and a clear head... Here's today's green smoothie!

Makes 1 serving:
1c almond or other non dairy milk
2 handfuls (or 2-3 cups) baby kale or other green
1 banana
1T almond butter or other nut butter

Blend all in a Vitamix or other high speed blender!

Todays smoothie!!! And it’s “dadurday”. Our boys call Saturday, dadurday 😂. Now... if only they would drink these damn smoothies again!! As they get older, they get more picky 😩.

​I buy lots of fruits and vegetables so when I get through almost a week without using them, I need to use them up before going bad! So what better... throw them in a smoothie 👌🏻.

Makes 2 servings:

2c coconut water
1/2 peeled cucumber
1 clementine
2 stalks celery with leaves.
1c pineapple
1 banana
2 large handfuls of spinach, kale, romaine or any other green... even mixed green salad!

Blend all in a Vitamix until smooth.

Today’s smoothie was sooo creamy and yummy!

I added something a bit different. So Delicious Coconut Yogurt (non dairy) and vanilla flavored!

I do not add dairy (from animals) to smoothies, ever. It slows digestion and causes inflammation. So using alternatives is a must!

Recipe for 2 servings:

1 to 1.5 (I used another half bc it was open from my kid who didn’t finish it!!) containers of coconut yogurt - vanilla flavor
1/2 cup non dairy milk alternative.
1-2 handfuls spinach
1-2 handfuls of baby kale
1/3 cup of uncooked whole rolled oats (to give this smoothie more substance and hold you over till next meal!)
1 cup chopped pineapple
1 frozen banana
small nub (thumb size) fresh ginger.

Blend all in a Vitamix or Other high speed blender!!
